CELEBRATE CHINESE NEW YEAR WITH EASY TO PREPARE RECIPES FEATURING TSINGTAO BEER

According to Chinese tradition, the "Year of the Horse," which began February 12, 2002, should be a lively, high-spirited and exhilarating time. To kick off the Chinese New Year, revelers from around the world will enjoy festive meals, fireworks and family celebrations.

One easy and fun way for anyone to celebrate the Chinese New Year is to enjoy authentic Chinese food and drink. For those who want to celebrate the New Year, here are two simple recipes that can be prepared in minutes and will help revelers ring in the "Year of the Horse" in style. There's even a recipe that includes authentic Tsingtao Beer from China as a key ingredient.

Shrimp Steamed in Tsingtao Beer
1 cup Tsingtao Beer
1/2 cup soy sauce
1 tablespoon sugar
1 tablespoon chopped fresh ginger
1 tablespoon finely chopped garlic
4 whole star anise cloves
1 pound large raw shrimp, deveined in shell

Combine beer, soy sauce, sugar, ginger, garlic and star anise in saucepan. Swirl pan to dissolve sugar. Add shrimp and stir to mix. Bring mixture to boil over medium heat, stirring occasionally. Cover pan and remove from heat; let steep two minutes. Serve warm peel-and-eat shrimp in bowls with enough cooking liquid to moisten.
Enjoy with cold Tsingtao Beer. Makes four servings.


Shrimp Fried Rice
2 tablespoons vegetable oil
1 egg, lightly beaten
1/2 cup chopped red bell pepper
1/2 cup thinly sliced green onions
1/3 cup frozen peas, thawed
1 cup (6 oz.) cooked salad shrimp
3 cups cooked white rice, chilled
1/2 cup diced ham
2 tablespoons oyster sauce

Heat wok or large skillet over high heat. Add oil; swirl pan to coat bottom. Add egg and stir-fry quickly to softly scramble egg. Add bell pepper, green onions, peas and shrimp; stir-fry 30 seconds. Add rice; stir-fry two minutes, separating rice grains while stirring. Add ham and oyster sauce. Stir mixture until heated through. Serve immediately with cold Tsingtao Beer. Makes 2 to 3 servings as a complete meal or 4 to 6 servings as part of a larger meal.
